How to make lavender syrup for coffee

On average to make lavender syrup for coffee combine 2 cups sugar, 1 1/2 cups water, 1/4 cup dried lavender. Place ingredients in a saucepan on medium heat and bring to a boil. Remove from heat and let steep for 45 minutes. Enjoy your lavender syrup for coffee.


  • 2 cups sugar or 1 cup pure honey (more about honey below)
  • 1 1/2 cups water 
  • 1/4 cups lavender ( this can be increased to 1/2 cup lavender buds for stronger result.) You may want to make lavender syrup stronger if you drink a darker roast coffee.


  • Place ingredients in sauce pan.
  • Bring saucepan to boil.
  • Remove pan from heat.
  • Let lavender steep for 45 minutes.
  • Remove lavender buds from syrup.
  • Refrigerate.

Lavender syrup is strong and can over power your coffee if you add to much. Some people really like the floral flavor of lavender syrup for coffee and will add a lot to make it really stand out. The recommend amount of lavender syrup for coffee is 2 tablespoons. Try to start there you can always add more if desired. Also make sure to take into consideration the thickness of syrup. If adding lavender syrup to cold coffee start with a small amount to to avoid it settling to the bottle of the mug or cup. As sugar or honey cools it thickenings this is less of an issue with hot coffee.

To make honey lavender syrup a great replacement for normal table sugar. Replace the 2 cups sugar for 1 cup honey. This will give you the same sweetness as the normal lavender syrup while using more natural ingredients.
